A strawberry galette is an ideal summer dessert that combines ease of preparation and the delicious taste of fresh berries. Ingredients
For the dough:
- Wheat flour – 200 g
- Butter (cold) – 100 g
- Sugar – 1 tbsp.
- A pinch of salt
- Ice water – 3-4 tbsp.
For the filling:
- Fresh strawberries — 300-350 g
- Sugar — 2-3 tbsp (to taste)
- Corn or potato starch — 1 tbsp
- Vanilla sugar — 1 tsp (optional)
- Egg — for greasing the edges
- Sugar for sprinkling — 1 tsp
Step-by-step recipe
- In a bowl, mix flour, salt and sugar. Add cold diced butter and rub with your fingers until crumbly. Gradually add ice water until the dough comes together into a ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Wash the strawberries, dry them and cut them into large pieces. Mix the berries with sugar, starch and vanilla sugar. The starch is needed so that the filling does not spread and becomes thick after baking. Roll out the chilled dough into a circle about 30 cm in diameter. Place the strawberry filling in the center, leaving a 4-5 cm border. Carefully fold the edges of the dough inward, pressing lightly to maintain the shape.
- Transfer the galette to a baking sheet lined with parchment. Brush the edges with beaten egg and sprinkle with a little sugar – this will give it a golden color and a crispy crust.
- Bake in an oven preheated to 190 ° C for about 35-40 minutes, until the dough is golden and the filling is bubbly.
Serve the galette warm with a scoop of vanilla ice cream or whipped cream.
